Dessert:
“Strauben” (deep-fried pastry) for 4 persons
Ingredients: 200 g flour, 250 ml milk, 20 g butter (clarified), 3 egg yolks, 20 ml Schnapps, 3 egg whites, 1 pinch of salt, 50 g sugar
Additional ingredients: Shortening, powdered sugar to sprinkle over the pastry

- Mix together and blend the flour and milk until smooth, then fold in the clarified butter, egg yolks, and Schnapps.
- Beat the egg whites and salt lightly, add sugar and beat until fluffy, then fold into the dough.
- In a flat cooking pot, heat up the shortening to 170 C°.
- Now pour the batter through a funnel from the middle outwards in circles into the hot shortening and let fry until golden yellow on both sides.
- Take the “Strauben” out of the shortening, let them drip onto kitchen blotting paper, and sprinkle with a little powdered sugar before serving.
- Frying temperature: 170 °C, frying time: 3-5 minutes
